The Hotel Chef, Martin Bayliss
The Carlton Hotel's bistro and restaurant is in the capable and experienced hands of head chef and hotel part owner, Martin Bayliss, who will ensure your Geelong dining experience is an enjoyable, comfortable and delectable one.
Martin has a wealth of food industry knowledge to draw on having started cooking in 1978 as an aprrentice chef at the Preston Hotel where he worked for four years before moving to the Corio Hotel for a short stint.
From there, he went to the Lara Hotel for two years before being asked back to the Corio Hotel where he worked for seven years as the Head Chef. He was then approached to work at Savvyers Restaurant where he worked for five years.
Next was the Lord of the Isles Tavern restaurant where he was Head Chef for 11 years. Under his guidance, his team was awarded five AHA Awards and the the coveted 3AW Food Award - an award that had not been won outside Melbourne for 12 years.
He has now fulfilled his dream of owning and running his own business and, with partners John Mole and Rod van de Chys, he bought The Carlton Hotel, Malop St, Geelong in 2004.
Throughout their past six years of ownership, the hotel has won two awards for best family dining restaurant, as voted by the public, for the Entertainment Guide as well as being finalists in the Telstra Golden Plate Awards.
